Some people insist on dreaming and that’s why they can and do create.

They travel mentally through visions and quests , discovering new horizons.

And of course they want more than anything to share them.

Eggplant, zucchini, mushrooms, colorful peppers, tomato, manouri, olives, cucumber, olive oil with fresh basil and parsley with honey and balsamic vinegar sauce

The many journeys inevitably led to encounters with different culinary cultures and the sauces bonded… through old secrets and stories around local recipes.

A new vision after a long course of crossing markets with herbs and spices of oriental and western origin.

So somehow, through this inner drive and passion I started my culinary journey as Chef Demis.

A trip with transatlantic routes and to neighborhoods of smaller destinations that had something of a fairy tale

Because the process of creating a good dish requires above all Love, in addition to choosing the right ingredients and experience.

I'm cooking...

I cook for all of you wherever you are, making the world closer and friendlier, through the flavours of dreams and the smells of nostalgic memories.

My endless wanderings led me to a small and beautiful island in the Aegean Sea, Alonissos.

Perhaps my own Ithaca of creative expression through my special and sophisticated restaurant in the Old Town of Alonissos.

In the Heart

Our Extra Virgin Olive Oil is the world award-winning “En Kardia”, from Sparta in the Peloponnese.

It is a low acidity olive oil of 0.4% produced from a variety of olives of the Coronean variety.
